Gas is licensed work and there is no sensible corner to cut in it. Appliance connections, new points, leak testing, and the compliance paperwork where the job calls for it.

Cooktops, ovens, gas heaters and outdoor points. The common trap on a kitchen renovation is assuming the existing point is in the right place and the right size for the new appliance — worth checking before the bench goes in, not after.
If you can smell gas
Turn the appliance off, turn the gas off at the meter if you can reach it safely, open the windows, and do not touch light switches. Then get outside and ring. That is not a wait-until-morning situation.
The certificate matters later
Where the work requires a compliance certificate you get one. Keep it. It is the document that gets asked for when you sell the house and the one your insurer wants if anything ever goes wrong.

Can a general plumber do gas work?
Not unless they hold the gas licence for it. Gas fitting is a separate licensed class in Victoria. It is a fair question to ask anyone quoting you, including us.
